A fun fact about me, I LOVE pasta! No matter how bare my kitchen cabinets are, there is always a box of pasta noodles and Prego traditional sauce in there. My friends swear I have to be part Italian due to my constant crave for spaghetti. I have to agree with them sometimes.
So, what's for dinner? Spinach Stuffed Shells (my mouth is watering as I type this). It's a fun and easy recipe that even a beginner cook will be able to master.
What you need:
- 1 box of jumbo pasta shells
- 1 pkg. frozen chopped spinach, thawed
- 1 cup of shredded mozzarella cheese
- 1 cup of sharp cheddar cheese
- 1 oz. container ricotta cheese
- 1 jar of spaghetti sauce (if your are a sauce lover like me, use 2 jars)
Instructions:
- Preheat oven to 350 degrees
- Cook jumbo shells according to package directions; drain. Cool pasta shells on a single layer aluminum foil on a 13 x 9 inch baking dish to keep the shells from sticking together
- Combine ricotta, thawed spinach, mozzarella, and cheddar cheese in large bowl, stirring well
- Spoon about 1 - 1 1/2 tablespoons of mixed ingredients into each pasta shell, arranging them back on the baking dish
- Once you have filled the shells, cover with sauce
- Sprinkle additional shredded cheese on top if desired
- Cover with aluminum foil; bake for 35 - 40 minutes or until hot and bubbly
Servings: 8-10
